Grilled Cheese

So today I am speaking at the Leadership Network Innovation3 conference in Dallas (my hometown – how I miss you!).

Since we have been in what I shall call Seriousville for the last few days, I thought it would be fun to do something completely silly…like put up how I make grilled cheese sandwiches.

I’ve been twittering about my grilled cheese sandwich making skills for a while now, and the people have demanded the secret.? Keep in mind this process has been one perfected over time, and has yet to be replicated…but here are the instructions.

It’s all about the timing!

For best results, use a buttermilk 1/2″ thick bread with a mild organic cheddar cheese.

Place a large skillet on your burner, and set the heat at a 5.5-6.
Spray butter flavored Pam (or other cooking spray) until it covers the pan.
Walk to the refrigerator and pull out Salt and Cream style butter and cheese.
Walk back to the counter by the stove.
Spread butter on ONE piece of bread.
Place bread butter-side down on skillet.
Open cheese packet and place cheese on bread.
Spread butter on the other piece of bread and place bread on cheese, butter side up.
Wait 35-45 seconds.
Flip sandwich.
Seal the cheese bag and close the butter tub.
Walk to fridge and place in fridge.
Wait 35-45 seconds and flip.
Continue flipping every 30 seconds until the bread has achieved a golden-brown look.
When you’ve reached the desired brown-level, place sandwich immediately on a ceramic plate.
Cut the sandwich USING THE SPATULA/FLIPPER into triangles (either 2 or 4).
Turn off stove.
ENJOY!

Oh, that’s what I was doing wrong–you have to cut it into TRIANGLES. I was doing parallelograms.

    Ha!.

I’m not suggesting for a moment that you were reading my blog, I just think it’s hilarious that within a month there’s been (at least) two posts regarding cheese in blogs which would otherwise be fairly cheeseless.

So once you’ve checked out this one people (and how yum does it sound), come and check out my similar-but-nothing-like-it-really ‘Cheese on Toast’

    WAIT!!!

WHAT KIND OF KNIFE DO I SPREAD THE BUTTER WITH?
Precisely what kind of skillet do I use??
What kind of spatula do I use??

Oh Anne… you’ve left out so many IMPORTANT points here! I’m going to be forced to eat soup from a can once again!!

Now I know why my floors are so dirty. You walk back to the counter by the stove BEFORE cooking anything. Thanks Anne. Genius. Pure Genius.
Seriously, the buttermilk bread sounds awesome.

@daveallen – you are indeed a genius and picked up on anne’s secret to her successful GCS – you have to cut cheese !!! simple, direct, straighforward and natural – who woulda thought it could be SO simple!!!

I can cook….just not grilled cheese sandwiches! Odd, I know…so thanks for the step-by-step.

Could you have a cookbook in the works?? You never know!

You forgot the tomato slice and the pepper that goes with it.

I know. It sounds crazy. Stupid. Gross, even.

Seriously though. Once you’re done actually making it, after you put it on the plate, but before you cut it into triangles, open it up and slide a slice of tomato in there. It helps to dress the tomato slice with salt or pepper (or both, if that’s your thing) before placing it on the sandwich.

Deli ham is good too, but that should go without saying.

Ok here’s how to rock that Sandwhich up… Being a Portland boy cheese is a huge issue to me, cheese just isn’t cheese. No. It is some sort of vortex that suck you into another world. If you have ever had Tillamook cheese represent then you know what i’m talking about. Take that Sandwhich you mentioned above and slap some aged white cheddar on it with a little cholula sauce. Now that’s tasty.

Anyhow, the real reason I’m here, your book should arrive tomorrow.
I’m extremely excited to read it and write a review on it.

I make a lazy grilled cheese by toasting bread, buttering it, placing TWO slices of cheese between and then putting it in the microwave for ~30 seconds. If you use a paper plate all you have to wash is the knife you buttered with.

Every time I drop a piece of bread with butter on it, it lands butter side down. Unless, of course, I am making a grilled cheese sandwich, in which case it manages to land butter side up.

If any of you face this dilemma, you must remember to manually flip the bread so that it is situated butter side down. If you don’t, the sandwich is just odd. Trust me, I’ve been there.

That’s exactly how I made your daddy and me a grilled cheese sandwich tonight (except for cutting in triangles). Go figure that I would make grilled cheese sandwiches tonight and just now read your post. Great minds think alike!

Do yourself a favor and pressa little grated parmesan cheese into the buttered sides of the bread before you grill it. AWESOME.
